Fattoush for the home table
Crisp vegetables, plenty of herbs and golden pita, brought together with a lemon and sumac dressing.

In this story
Fattoush brings bread and vegetables into the same bowl, with a dressing that reaches every leaf. This version for cooking at home pairs juicy tomatoes with cucumber, radishes and a generous handful of herbs.
The pita goes into the oven while you prepare the vegetables. Keep it separate until the last moment, then carry the finished salad straight to the table.

Ingredients
- 2 small pita breads, about 120 g
- 60 ml olive oil, divided: 15 ml for the bread and 45 ml for the dressing
- 150 g romaine lettuce
- 350 g ripe tomatoes
- 250 g cucumber
- 80 g radishes
- 2 spring onions
- 20 g flat-leaf parsley leaves and tender stems
- 10 g mint leaves
- 45 ml freshly squeezed lemon juice
- 2 tsp ground sumac
- 1 small garlic clove, finely grated
- ½ tsp fine salt, then adjust to taste
- 10 ml pomegranate molasses, optional
Method
Toast the pita
Heat the oven to 200°C, or 180°C fan. Split the pita into thin layers and tear into bite-sized pieces. Toss with 15 ml olive oil, spread on a tray and bake for 8–10 minutes, turning once, until golden and crisp. Check early if the bread is very thin; leave to cool.
Prepare the vegetables
Wash and dry the vegetables and herbs. Chop the lettuce, tomatoes and cucumber into bite-sized pieces. Thinly slice the radishes and spring onions. Roughly chop the parsley and mint, then put everything in a large bowl.
Mix the dressing
Whisk the remaining 45 ml olive oil with the lemon juice, sumac, garlic, salt and optional pomegranate molasses. Taste a little dressing on a cucumber slice and adjust the seasoning if needed.
Finish at the table
Toss the vegetables and herbs with the dressing. Fold in half the cooled pita, scatter the rest over the top and serve immediately.
Make it part of a meal
Serve alongside hummus, grilled vegetables or simply cooked fish. The quantities make four generous side portions; for a mezze spread, set the bowl in the centre and let everyone help themselves.
Ingredient note
Ordinary wheat pita contains gluten. If using a gluten-free alternative, check its label and watch it closely in the oven, as its toasting time may differ.
